Given the olive’s deep history and its central role in so many cultures – the world of fine olive oils is every bit as diverse and fascinating as that of fine wine. In this introductory class, we’ll learn how to taste olive oil, what to look for (and what to look out for), while we explore a range of popular and obscure olive varietals that make some of the world’s best oil. We’ll talk about (and, of course, taste) simple food pairings that will best showcase and complement the flavors of different oils, and we’ll take a tour of the typical styles and varietals of France, Italy, Spain, Portugal and the United States – with a special stopover in Oregon! Come with an appetite – there will be plenty to eat and drink.
