Join specialty food buyer–and demo chef– Joe Randazzo for our next Cook the Book Class, where he’ll be preparing a delicious meal from the beloved Northwest cookbook: Kachka, by Bonnie Frumkin Morales. Kachka, an acclaimed Portland restaurant, serves modern Russian cuisine with an emphasis on vibrant and locally sourced ingredients. This class will include a generous meal and discussion about updated Russian fare. Joe will be preparing shuba (pickled herring salad), tvorog vareniki (cheese dumplings) and apple ponchiki (doughnuts) and of course offering some helpful advice on the best way to layer flavors, shop for produce and explore this fabulous book.  Wine pairings will be available for purchase.
