Naturally higher in butterfat than either cow or goat’s milk, sheep’s milk cheeses are particularly interesting to taste side by side: from the mild, buttery, fresh flavors of young cheeses, to the sharply piquant complexity of aged cheeses, the diversity of textures and tastes is remarkable. We’ll discuss the at-times incredible story and cultural heritage of Old World icons, such as Roquefort, Pecorino Toscano, Manchego and Ossau-Iraty, and introduce a few exciting American originals, with accompanying pairings of wine, beer and small bites.
